ingredients
80g, 4 tbsp Dress Italian Red Pepper Pesto
2 courgettes, blanched
2 carrots, peeled, boiled and cut into pieces
110g, 4oz, 1/2 cup green beans, boiled
110g, 4oz, 1/2 cup cherry tomatoes, cut into quarters
2 potatoes boiled and cut in pieces
1 red onion or 5 spring onions, finely chopped
a few fresh leaves of mint, finely chopped
30 ml, 2 tbsp, 1fl oz extra virgin olive oil
salt and black pepper
instructions
Mix all the vegetables together and dress with the Dress Italian Red Pepper Pesto, salt and black pepper, mint, extra virgin olive oil and lemon juice. Serve with crunchy bread.
