sicilian paella with sausage
2x 350g jar Dress Italian Siciliana Sundried Tomato Sauce
2 chicken breasts, cut into small pieces
3 spicy sausages (chorizo), cut into small pieces
1 red pepper, cut into small pieces
1 yellow pepper, cut into small pieces
2 cloves garlic
60 ml, 4 tbsp, 2fl oz extra virgin olive oil
flat leaf parsley, chopped finely
400g, 14oz, 13/4 cups long grain rice
salt and black pepper
Heat the extra virgin olive oil in a pan and add the whole garlic cloves and chilli. Sauté for 2 minutes. Add the chopped peppers and sauté for another 5 minutes. Add the chopped chicken and sausage. Mix together well. Pour over a jar of Dress Italian Siciliana Sundried Tomato Sauce and cook for a further 10 minutes. Remove the garlic clove. Cook the rice in plenty of salted boiling water until al dente. Drain and stir into the Tomato mixture. Add the parsley, season with salt and black pepper and serve.
