ingredients
80g, 3x tbs Dress Italian Classic Basil Pesto
4 chicken breasts, sliced into pieces
200g, 7oz, 1 cup pumpkin, cut into cubes
1 onion finely chopped
280g, 10 fl oz tin coconut milk
2 bay leaves
30 ml, 2 tbsp, 1fl oz extra virgin olive oil
salt and black pepper
instructions
In a heavy-based saucepan, heat the extra virgin olive oil and add the chopped onion. Saute until transparent then add the chicken. Brown the chicken pieces on one side and stir in the Dress Italian Classic Basil Pesto. Pour over the coconut milk, add the bay leaves and season with salt and black pepper. Reduce the heat and leave to simmer for approximately 35 minutes. Serve with steamed basmati rice.
