2x 350g jar Dress Italian Tomato and Chilli Sauce
600ml, 1 pint of water
1 cucumber
small bunch of spring onions
1 red pepper
1 yellow pepper
6 fresh mint leaves
juice of 1 lemon
salt and black pepper
instructions
Chop the cucumber, spring onions, red and yellow pepper into very small cubes. Pour the Dress Italian Tomato and Chilli Sauce into a large bowl and add the cold water. Mix in the chopped vegetables, lemon juice and chopped mint leaves to taste. Season with salt and black pepper. Either serve immediately or refrigerate for a couple of hours to allow the flavors to develop and the soup to chill. Serve with crunchy bread.
